HEIC is the format iPhones have used for photos since iOS 11. It stores the same quality as JPG in roughly half the size — which is great until you try to open one on Windows, upload it to a web form, or send it to someone whose software has never heard of it.

Why your iPhone photos are HEIC
Apple switched the default camera format to HEIC in 2017 because it cuts file size roughly in half at the same quality. Inside the Apple ecosystem you never notice — Photos, iMessage and AirDrop all handle it. The problems start at the border: Windows needs paid codecs, many web upload forms reject it, and older software simply can't open it.

If you keep converting the same photos, fix it at the source: open Settings → Camera → Formats and choose "Most Compatible". New photos will be saved as JPG from then on. The trade-off is larger files — which is why converting on demand, only when something rejects a HEIC, is what most people actually want.
Does converting HEIC to JPG lose quality?
Both formats are lossy, so a conversion re-encodes the image. In practice, at quality 90 or above the difference is invisible for photos — you'd need to zoom into flat color gradients to find it. Keep your HEIC originals if you might need maximum quality later, and export JPGs whenever compatibility matters.
